      New potatoes from the oven

      • Preparation time: 55 minutes
      • Type of meal: dinner
      • Seasonal product: broccoli

      Roasting vegetables on a baking sheet is the ideal way to make leftovers. Although you can roast almost any vegetable, we use carrots and fennel in this recipe. Fennel from the Netherlands is available until October and carrots until November. Both vegetables get extra flavor through roasting.

      What you need for 4 people

      • 800 g of new potatoes with peel
      • 300 g of forest pens (about 4 to 5 pieces)
      • 2 fennel tubers
      • 3 pork sausages
      • 2 tsp Provencal herbs

      Vegetarian alternative: omit the sausage or place vegetarian balls or falafel with the vegetables on the baking tray for the last ten minutes of the baking time.

      How to prepare the dish

    1. Preheat the oven to 200 degrees and cover a baking sheet with baking paper.
    2. Wash the potatoes well and dry them with a clean tea towel. Put them in a large container.
    3. Wash the forest pens well (peeling is not necessary), halve them and then cut the carrots in half lengthwise. You can cut thicker specimens in four lengthwise. Put the sliced ??bunches in the bowl with the new potatoes.
    4. Clean the fennel and remove the stems. Halve the fennel tubers, remove the hard core and then cut them in half. Place the fennel slices by the carrot and new potatoes in the bowl.
    5. Pour a dash of olive oil over the vegetables and add the Provencal herbs and some coarsely ground salt. Mix everything well with your hands and distribute the vegetables on the baking sheet.
    6. Push the sausage meat out of the casings and form around twelve balls. Spread the sausage balls over the vegetables and slide the baking sheet into the middle of the oven. Bake everything in 45 to 50 minutes until golden brown and done.
    7. Enjoy your meal!
